Vegetables soak up all the flavor from this marinade and keeps them flavorful as well as juicy and tender on the inside and allows them to be slightly crispy on the outside.
Ingredients
- 1/2 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons sale
- 1 teaspoon grond black peper
- 1-1/2 teaspoons fresh oregano, shopped
- 2 cloves garlic, crushed
Instructions
- Mix ingredients.
- Combine cut, fresh vegetables and marinade in a large resealable plastic bag.
- Refrigerate for 1 to 4 hours, turning to coat.
- Thread veggies onto skewers and grill over med-low heat until tender.
Notes
Most vegetables, except leafy greens, can be skewered and served as vegetable kabobs. An often overlooked vegetable is corn on the cob, it\'s a delicious addition!
