This jam will give you a lot of spice with lots of yummy pepper pieces, if you want to ease your way into the heat, try reducing the amount of peppers you use.

Ingredients
- 1/2 lb Sugar rush peach chili
- 3 3/4 lb granulated sugar
- 1 cup white or cider vinegar
- 1 tsp salt
- 3 oz fruit pectin
Instructions
- Finely chop Sugar rush peach chilies
- In a large pan, add peppers, sugar, salt and vinegar
- Bring to a boil, then reduce to simmer for about 10 min.
- Turn up the heat to high and add pectin and bring to a boil to 1 min. stirring constantly.
- Remove from heat and let it cool.
- Scoop jam into jars and put jars in boiling water for 10 min. and let it cool completely.
Notes
If you like the jamo to have a bright yellow color you may want to add food coloring after removing from the heat.
