This jam will give you a lot of spice with lots of yummy pepper pieces, if you want to ease your way into the heat, try reducing the amount of peppers you use. This recipe was adapted from Chili Pepper Madness.
1/2 lb Sugar rush peach chili
3 3/4 lb granulated sugar
1 cup white or cider vinegar
1 tsp salt
3 oz fruit pectin
Finely chop Sugar rush peach chilies
In a large pan, add peppers, sugar, salt and vinegar
Bring to a boil, then reduce to simmer for about 10 min.
Turn up the heat to high and add pectin and bring to a boil to 1 min. stirring constantly.
Remove from heat and let it cool.
Scoop jam into jars and put jars in boiling water for 10 min. and let it cool completely.
If you like the jamo to have a bright yellow color you may want to add food coloring after removing from the heat.
